To get a strong coffee flavor, roast the beans on a cookie sheet for a couple of minutes. then grind them and brew double strength.

One of my favorite coffee desserts is Mocha Cheesecake Bars; this creamy coffee cheesecake is easy to make and perfect for the holidays. But once you try it, you will want to make it all year round.
Africafe Coffee Mocha Cheesecake Bars
For the Crust
1/4 cup hot fudge topping
30 Chocolate sandwich cookies
For the Filling
1/2 cup strong Africafe Coffee
1 envelope unflavored gelatin
16 oz. cream cheese
1 cup sour cream
3/4 cup sugar
Line a 13 X 9 baking pan with non-stick foil.
Finely crumble the cookies and add the fudge topping to moisten. Firmly press into the prepared pan and place in the freezer.
Place the coffee in a saucepan and sprinkle the gelatin over it, let stand for 2 minutes. Stir over low heat until the granules dissolve.
Beat together the sugar and cream cheese in a large bowl, until smooth. Beat in the sour cream and coffee mixture on low speed. Pour into the crust and refrigerate until firm, about 4 hours.
Lift the foil out of the pan and cut into strips, drizzle with fudge topping and add coffee beans on top and enjoy.
